
Since May means Cinco de mayo (because, yes sometimes I think Matt believes he is partially Hispanic so why not celebrate) I started making a lot of Hispanic foods. One in particular that I have had plenty of and have come to really enjoy is the Pupusa. It has to be the right kind though. In the restaurants I usually stick to a bean and cheese or just cheese. I always take a quick glance at the restaurant to make sure I see where the cabbage is coming from - a cold place and not communal bucket, because I actually really enjoy the whole package. You need the cabbage with the red spicy sauce all atop of your perfectly crisp Pupusa. That is what makes a great Pupusa. So, after much study over the Pupusa I got to work. I must say they were quite delicious and looked pretty legit, too. I even strayed from my bean and cheese rule to a shredded pork, only because I knew where that pork was coming from. ;)
Someone had the great idea of having a water balloon fight for FHE. I won't name names but that also meant mom was filling up a pool full of water balloons and dealing with the aftermath what we like to call "poor sport". And what is always the downside of a water balloon fight is that it takes so much time filling up the balloons and they disappear so fast that Preston became a little emotional that the fun had to stop. I think he was also mad because someone (who will remain nameless) sort of dumped him into the pool which made things get a little heated. It's all fun and games around here folks.
Mother's day weekend meant the boys going on a father's and sons camp out and I was suddenly left with more time than I have had for a while. So I decided to use that time wisely and test some recipes. First up, my neighbor made some ice cream for us and I absolutely had to remake it. So, I did. And I would gladly make it over and over and over. Raspberry Blackberry Streusel Ice Cream can easily make you an ice cream addict. While the ice cream was churning I had to distract myself from hovering over the ice cream machine waiting for it to be done, so I made some homemade mascarpone cheese. I love mascarpone cheese. We have had it served on toast and with rolls in Europe several times and I used to use it a lot when I worked in a restaurant and also used it in place of butter for my own snacks while in the busy restaurant kitchen (an expensive replacement to butter). But I have never bought it for our own enjoyment. I couldn't it is a little pricey. It was so easy to make and slightly different than the store bought stuff but it was still delicious.
When the boys came back home from their camp out they gave me these signs they had made while they were there. Well, I guess technically Porter gave me a sign. Preston's was made for his cousins. (they were supposed to be for the mom's but I guess that is where this relationship is going) I think it is cute and it is even cuter being worn by Mr. Porter Man.
As far as mother's day celebrations go - besides the Friday time to myself, the signs and a pedicure, I was treated to a wonderful breakfast that Matt prepared. He made me Lox Bagels which is something we enjoyed on our cruise - you know that cruise of Houston Harbor. It was delicious and I love how Matt is always trying to think of new things to make me. He also surprised me with some pepper spray to keep me safe while I run in the mornings and some awesome blue tooth headphones that I have not gotten to use yet because of technical issues. It was a great day. They all made it special. I am very grateful to have all of them in my life. I am not the world's greatest mother, and am not that naturally empathetic or nurturing. But I have learned so much in the short 7 years that I have been a mother and most of that is that there is no perfect mother out there and all kids are different. It is a calling in life that stretches me beyond the capacity that I even knew I had. But I love my kids and at the end of the day I hope they see past all my mistakes and still love me.
