I love tacos! Seriously, LOVE them. I don't bother with enchiladas, burritos, or really anything else
on the menu if we are eating at a Mexican restaurant. I go straight to the taco section of the menu. So, when Matt told me about a taco festival in Scottsdale it didn't take me more than a second to respond, " uh, YES! We have to go there." Even in the heat, we took on the challenge of finding our favorite taco. Some restaurants were serving up classics like you would typically see. Al Pastor, carne asada, etc. Others (the finer establishments) were putting fun twists on the classics. I love creativity with food. So you can only guess which ones were winning me over.
Several tacos later we had our winner. And my belly was stuffed, our kids were tired. And we were all very hot.

Right here. The BEST Taco. Sweet and spicy cornbread, creamy and tangy slaw, with tender chicken all on top of a homemade half flour half corn tortilla. It was seriously delicious. |

This sounds so fun! You know what you have to do now though, right? Come up with a copycat recipe for your favorite one and post it :-)
